waveco® Joins the Kitchen of Gambero Rosso Academy

waveco® and its innovative induced maturation© technology have entered the classrooms and kitchens of the prestigious Gambero Rosso Academy, located in the heart of the “City of Taste” in Rome. NCG (Next Cooking Generation), the innovative startup under the Gourmet Service Group, has been selected as a partner for the new “Chef Tech Pro” course—a professional training program designed for aspiring chefs. Under the expert guidance of Chef Igles Corelli, the course will explore new technologies to enhance culinary practices.

Gourmet Services and its cutting-edge startup, NCG, were chosen for their excellence in research and development. Their lab has produced advanced equipment that is poised to revolutionize professional kitchens, using technologies and techniques that have never before been applied to the culinary world.

As Chef Igles Corelli explained during the course’s introduction, “Until now, no one had thought of applying focused ultrasound technology to food.” However, in the past four years, the Next Cooking Generation workshop, in collaboration with the Faculty of Veterinary Medicine at the University of Teramo, has perfected machines that not only improve food quality but also preserve its organoleptic and nutritional properties. These innovations eliminate bacterial loads, extend shelf life, and help save time, energy, and reduce food costs for restaurants.
