waveco® Ultrasound technology have shown a wide variety of applications e.g. increase meat tenderness and decontaminate foods. Sonication creates longitudinal waves that originate zones of alternate compression and expansion. These zones of pressure change cause the co-called “cavitation” that generates gas bubbles in the product creating shock waves resulting in implosions, causing destruction of bacteria and tenderizing the fibers of the raw ingredients.
