From Vision to Reality

After years of testing and development, Next Cooking Generation officially launched the waveco® system, the first of its kind to use focused ultrasound for accelerated food maturation. The system promised chefs the ability to tenderize meat, reduce bacterial load, and prolong shelf life, all without additives or altering flavor.

2018–2021
Growth Through Science & Trust

waveco® partnered with leading Italian universities and laboratories to validate its process. The product earned the trust of Michelin-star chefs and culinary experts, who integrated the machine into their high-performance kitchens. Its use spread across restaurants, hotels, and gourmet labs, earning a reputation for enhancing quality and consistency.

Public Demonstrations & International Curiosity

waveco® expanded its reach through a series of high-profile events and demos across Italy and abroad. From Milan to London, chefs and food professionals experienced firsthand how ultrasound could revolutionize prep time, waste management, and food safety. The groundwork for international expansion was officially underway.

2024
U.S. Launch: A New Frontier

With growing global interest, Next Cooking Generation US was born. Bringing waveco® technology to the American market meant adapting to new culinary cultures and challenges, but chefs in the U.S. quickly recognized its potential. Restaurants, catering businesses, and food labs began exploring how ultrasound could streamline their operations and reduce waste.
