Patented by Next Cooking Generation, an innovative start-up operating within the Gourmet Services group, it is entirely designed and manufactured in Italy, featuring an AISI 316 stainless steel structure and custom-made components sourced from top-tier Italian and German technology companies. 

With waveco® and its “Natural Improvement” process, it is now possible to mechanically replicate a process previously unattainable—the natural maturation of food. 

Utilizing cutting-edge push ripening technology, waveco® eliminates lengthy softening and maturation processes while significantly reducing cooking times. With waveco® in the kitchen, meat, fish, and vegetables achieve peak excellence—resulting in softer, more flavorful dishes while enhancing and optimizing their nutritional qualities.  Additionally, waveco® ensures compliance with key industry needs, including functionality, energy efficiency, food cost optimization, and food safety.

Together with two chef friends, we choose to work with beef shoulder—a tough, inexpensive, second-rated cut with high connective tissue and low fat content, making it notoriously difficult to cook.  This is where waveco® becomes essential.
